Roasted Cauliflower Tacos with Avocado drizzle-
Half a head of cauliflower chopped to 1/2inch pieces
Diced sweet opinion
Diced cherry tomatoes
1 TBSP olive oil
Half an avocado
¼ cup Hellmann’s Vegan Dressing & Spread
Juice from a lime
Salt & pepper to taste
Directions for Drizzle sauce-
In a processor, blend together lime juice, Hellmann’s Vegan Dressing & Spread, avocado, salt & pepper. Set to the side.
Directions for Tacos-
1.PREHEAT oven to 450°. Toss cauliflower and onion with olive oil and spread on a large rimmed baking sheet.
2.ROAST 25 minutes or until lightly browned and tender.
3.SERVE in warmed tortillas with your favorite taco toppings, like shredded lettuce or cabbage, diced tomato, onion and avocado.
4.Drizzle with Avocado drizzle and sprinkle with cilantro.
